
A healthy twist on a beloved comfort food.
Ingredients
- 400 g cauliflower florets
- 100 g grated carrots
- 50 g finely chopped onions
- 30 g chopped fresh parsley
- 2 cloves of garlic, minced
- 100 g chickpea flour
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- Salt and pepper to taste
- 3-4 tbsp olive oil for frying
- A lemon
Instructions
- Steam the cauliflower florets until tender, about 8-10 minutes. Mash the cauliflower with a fork or potato masher.
- In a large bowl, combine the mashed cauliflower, grated carrots, chopped onions, parsley, and minced garlic.
- In another bowl, whisk together the chickpea flour, cumin powder, coriander powder, salt, and pepper.
- Add the dry ingredients to the cauliflower mixture and mix until well combined.
- Heat a non-stick pan over medium-high heat and add 1 tablespoon of olive oil.
- Using a spoon or a cookie scoop, drop the cauliflower mixture onto the pan and flatten it into fritter shapes. Fry for 3-4 minutes on each side or until golden brown.
- Add more olive oil to the pan as needed and repeat until all the batter is used.
- Serve the fritters warm with your favourite dipping sauce and drizzle with lemon.
