A healthy twist on a beloved comfort food.

Ingredients

  • 400 g cauliflower florets
  • 100 g grated carrots
  • 50 g finely chopped onions
  • 30 g chopped fresh parsley
  • 2 cloves of garlic, minced
  • 100 g chickpea flour
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • Salt and pepper to taste
  • 3-4 tbsp olive oil for frying
  • A lemon

Instructions

  1. Steam the cauliflower florets until tender, about 8-10 minutes. Mash the cauliflower with a fork or potato masher.
  2. In a large bowl, combine the mashed cauliflower, grated carrots, chopped onions, parsley, and minced garlic.
  3. In another bowl, whisk together the chickpea flour, cumin powder, coriander powder, salt, and pepper.
  4. Add the dry ingredients to the cauliflower mixture and mix until well combined.
  5. Heat a non-stick pan over medium-high heat and add 1 tablespoon of olive oil.
  6. Using a spoon or a cookie scoop, drop the cauliflower mixture onto the pan and flatten it into fritter shapes. Fry for 3-4 minutes on each side or until golden brown.
  7. Add more olive oil to the pan as needed and repeat until all the batter is used.
  8. Serve the fritters warm with your favourite dipping sauce and drizzle with lemon.
