How do you make a boring vegetable interesting? Lob bread at it and a little seasoning... suddenly it is all kinds of tasty.

Ingredients

For the breaded cauliflower:

  • 1 large cauliflower, cut into florets
  • 200 g breadcrumbs
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 eggs, beaten

For serving:

  • Lemon wedges
  • Fresh basil

Instructions

  1. Preheat the oven to 200°C. Line a baking sheet with parchment paper.
  2. In a bowl, combine the breadcrumbs, smoked paprika, garlic powder, salt, and black pepper. Mix well.
  3. Dip each cauliflower floret into the beaten eggs, then coat it with the breadcrumb mixture, pressing gently to adhere the breadcrumbs.
  4. Place the breaded cauliflower florets on the prepared baking sheet in a single layer.
  5. Bake in the preheated oven for 15-20 minutes, or until the cauliflower is tender and the coating is golden and crispy.
  6. Remove the breaded cauliflower from the oven and let it cool slightly.
  7. Serve with lemon wedges for squeezing fresh lemon juice over the cauliflower.
  8. Garnish with fresh basil, if desired.

Note: You can also serve the breaded cauliflower with your favourite dipping sauce or aioli.
