This delicious baked dessert is perfect for when you're in need of a sweet treat.

Ingredients

  • 500 g cherries, pitted
  • 4 eggs
  • 150 g all-purpose flour
  • 150 g granulated sugar
  • 250 ml milk
  • 120 ml heavy cream
  • 1 teaspoon vanilla extract
  • Powdered sugar (for dusting)
  • Butter (for greasing the baking dish)

Instructions

  1. Preheat the oven to 180°C. Grease a 21cm round baking dish with butter.
  2. In a large bowl, beat the eggs and sugar together until well combined and slightly frothy.
  3. Gradually add the flour to the egg mixture while whisking continuously to avoid lumps.
  4. Stir in the milk, heavy cream, and vanilla extract until you have a smooth batter.
  5. Place the pitted cherries evenly in the greased baking dish.
  6. Pour the batter over the cherries, making sure they are fully covered.
  7. Bake in the preheated oven for 40-45 minutes or until the clafoutis is golden brown and set in the centre.
  8. Once baked, remove the clafoutis from the oven and let it cool slightly.
  9. Dust the clafoutis with powdered sugar before serving.
  10. Serve the cherry clafoutis warm or at room temperature. It pairs well with a dollop of whipped cream or a scoop of vanilla ice cream.
