Luxembourg's finest culinary moment, if I do say so myself. The ingredients list may be a little intimidating, but these delicious little dumplings are always worth the extra effort.

Ingredients

  • 600 g spring vegetables of your choice: root vegetables, radishes ...
  • 4 slices of raw ham
  • 50 g butter
  • 80 g walnuts
  • 100 g sour cream
  • Herbs and/or flowers for decoration

For the “Kniddelen“:

  • 150 g stale bread
  • 50 g buckwheat flour
  • 20 g wheat flour
  • 20 g grated parmesan
  • 1⁄2 shallot
  • 1 garlic clove
  • 2 eggs
  • 150 g milk
  • decoration
  • 100 g sour cream
  • Salt, pepper and nutmeg

For the lovage cream:

  • 150 g neutral oil
  • 40 g fresh lovage
  • 20 g egg white
  • 2 g salt
  • 8 g rice vinegar
  • 25 g ice cubes
