Luxembourg's finest culinary moment, if I do say so myself. The ingredients list may be a little intimidating, but these delicious little dumplings are always worth the extra effort.
Ingredients
- 600 g spring vegetables of your choice: root vegetables, radishes ...
- 4 slices of raw ham
- 50 g butter
- 80 g walnuts
- 100 g sour cream
- Herbs and/or flowers for decoration
For the “Kniddelen“:
- 150 g stale bread
- 50 g buckwheat flour
- 20 g wheat flour
- 20 g grated parmesan
- 1⁄2 shallot
- 1 garlic clove
- 2 eggs
- 150 g milk
- decoration
- 100 g sour cream
- Salt, pepper and nutmeg
For the lovage cream:
- 150 g neutral oil
- 40 g fresh lovage
- 20 g egg white
- 2 g salt
- 8 g rice vinegar
- 25 g ice cubes
