Ingredients

  • 60 ml olive oil
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 tsp paprika
  • 3 thyme sprigs
  • 1 fresh bay leaf
  • 250 ml chicken stock
  • 200 g canned chopped tomatoes
  • 800 g canned white beans, drained and rinsed
  • 2 tsp sherry vinegar
  • 4 fresh chorizo
  • Oregano, parsley and crusty bread to serve
