With his entire team in tow, Michelin-starred chef René Mathieu has opened "Fields" at Findel Airport, continuing his legacy of innovative plant-based cuisine after two decades at La Distillerie.

René Mathieu, the Michelin-starred chef renowned for his plant-based cuisine, has embarked on a new culinary chapter. After two decades at "La Distillerie" in Bourglinster Castle, Mathieu has moved to "Fields," the new restaurant at the Airfield Hotel near Findel Airport. On Wednesday evening, our colleagues from RTL Infos joined him during his first service at the new location.

Mathieu's entire team followed him to Fields, marking a fresh start while maintaining his role as a consultant for "Coté Cour", the brasserie that remains at Bourglinster Castle with a smaller team.

Reflecting on the transition, Mathieu shared: "It's been eight days since we took possession of the premises. There's always a little apprehension when you change restaurants, but we've put in a lot of work while staying relaxed. Those who love our cuisine will continue to follow us, no matter where we are."

The new setting at Findel Airport is a stark contrast to the historic charm of Bourglinster Castle, but Mathieu's signature dishes remain unchanged. Diners at Fields can expect the same plant-based cuisine that earned La Distillerie accolades, including being named the world's best plant-based restaurant by the We're Smart World guide for two consecutive years. "Right now, we’re focusing on roots to get us through the winter. And then there's leeks, endives, cabbage, and potatoes, of course", Mathieu explained.

After 20 years at La Distillerie, Mathieu expressed enthusiasm for the move, describing it as more aligned with his philosophy. While he holds fond memories of Bourglinster Castle, he acknowledged that the historic venue, though charming, "wasn't designed to be a restaurant" and consumed significant energy. "The castle is part of my life, and I'm very proud of what we achieved there. But I'm going to continue that story here", he said.

At 63, Mathieu remains passionate about his craft and eager to embrace new challenges. "I still want to grow, learn, and pass on my knowledge. My wife always tells me, 'When you can't work anymore, you'll be dead!' I can't stop. It's a passion", he remarked.
