Right, ignoring the fact that there are many, many things wrong with the name of this dish, it does look like Spring on a plate.

Ingredients

  • 360 g frozen peas
  • 90 g hulled tahini
  • 2 tbsp fresh dill leaves
  • 1 garlic clove, crushed
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 2 tbsp sunflower seeds
  • 2 tsp sesame seeds
  • 2 tsp linseeds (flaxseeds)
  • 9 x 80 g slices sprouted bread (see tip)
  • 240 g drained store-bought fermented vegetables of choice
  • 15 g loosely packed snow pea tendrils
  • 1/2 medium lemon, cut into 4 wedges
