René Redzepi, head chef and co-owner of the acclaimed restaurant Noma, has stepped down amid allegations of violent and abusive behavior in the kitchen. According to a New York Times report, he physically and verbally assaulted his employees, created a toxic work environment, such as making unpaid interns work 16-hour days and humiliating his workforce, as well as punishing the entire team for one person’s mistake.

The allegations stunned many, which put the restaurant and its values at the centre of an international drama.

In an Instragram post, Redzepi admits: “I can see enough of my past behaviour [...] to understand that my actions were harmful to people who worked with me.” He also acknowledges that “the outbursts, the anger, and at times even physical aggression, where I shouted and pushed people”, were unacceptable.

After more and more previous team members had opened up about the abuse, the renowned chef decided to resign from the restaurant he has co-founded and worked in for over two decades. “I have worked to be a better leader [...] An apology is not enough. I take responsibility for my own actions”, Redzepi writes in his most recent Instragram story.

Noma, located in Copenhagen, Denmark, is widely regarded as one of the worlds most influential fine dining restaurants. Founded in 2003, the restaurant became famous for its emphasis on seasonal, locally foraged ingredients, and culinary techniques that have not been used before. It has won many awards and has repeatedly been named the best restaurant in the world by ‘The World’s 50 Best Restaurants’.

Even amid the current controversy, Noma continues to thrive. The restaurant is now preparing to expand its excellence to Los Angeles, which Redzepi described as “a powerful moment to show what we’ve been working toward and to welcome guests to something truly special”.
