The acclaimed plant-based restaurant "La Distillerie" is set to move to a new location at Findel Airport in January 2025, rebranding as "Restaurant Fields, by René Mathieu."
On Wednesday, Resma SA announced that the Michelin-starred restaurant "La Distillerie," proclaimed as the best veggie restaurant in the world, will be relocating to Findel Airport. The restaurant will move into the premises of Hôtel Airfield, a location familiar to airport staff, and will undergo a name change.
The move is scheduled for January 2025, with the restaurant set to reopen as "Restaurant Fields, by René Mathieu." According to a press release, this relocation represents "an important step" for Chef René Mathieu and his team, who will be establishing themselves in "an exceptional location" near the airport.
Chef Mathieu will continue to focus on delivering "excellent plant-based cuisine, offering a unique gastronomic experience." The operator also confirmed that guests will have the option to stay overnight in one of the five "top-of-the-range" rooms or two suites at the existing Airfield Hotel. The press release further revealed that "a new concept" for La Distillerie in Bourglinster will be announced in 2025.
Regarding the reasons behind these changes, the press release cited a "response to a changing market." Resma SA explained that "the state of the labour market, current economic realities, and heightened customer expectations require us to adapt constantly." The restaurant operator concluded by stating that "these changes aim to enhance our services while creating new opportunities for our teams."
