While the croissant is now a symbol of French culture, its roots actually stretch back to Austria. The croissant's ancestor is the Viennese 'Kipferl', which likely dates to the 17th century.
It was not until the nineteenth century that an Austrian officer opened a Viennese bakery in Paris, bringing the Kipferl with him. French bakers adapted the recipe, introduced the now-classic puff pastry, and created the croissant as we know and love it today.
If you have ever tried to make croissants at home, you will know just how demanding this craft can be. The secret lies in the process known as 'turning' the dough – rolling it out, brushing with quality butter, folding, and repeating.
This creates dozens of delicate layers of dough and butter. As the croissant bakes, water evaporates from the butter, separating the dough and producing those signature airy pockets.
The end result: a perfectly crisp exterior and a soft, buttery, pillowy interior.
