Eating more local and seasonal produce is a great New Year resolution to make! Even in January, you don’t have to go without fresh vegetables - Brussels sprouts are harvested into February and beyond. This winter vegetable tastes even better if it has been exposed to low temperatures, and even frost. The little green buds are full of vitamins and minerals - something we all need to keep up our health throughout the winter.

Apart from sprouts, you’ll find other fresh produce - chicory heads, lamb’s lettuce, different sorts of cabbage, leeks, and Jerusalem artichokes. The choice is much wider than you might think!

One of the vegetables available in January is the salsify. Although it’s not much to look at, this is an outstanding vegetable for its calcium and phosphorus content; it also contains particularly digestion-friendly fibre.

Another tip:

To keep leeks fresh for up to a month, wrap them in newspaper and stand them in a bucket of damp soil or sand. If you place them upright, not flat on the soil or sand, they will retain all their nutriments.
